Spicy Thai noodle soup

In the cold winter months, there’s nothing more soothing than a bowl of hot, spicy, flavourful, freshly cooked soup. I love Thai food, I love the flavour combinations, the use of really fresh and simple ingredients, and the lightness of many of their dishes. Here’s one of my favourites. Enjoy!

Homemade pavlova

Pavlova is one of my favourite desserts and while I’ve always thought it originated from Australia or New Zealand, I’ve read articles that refute this claim. In any case, it’s a treat worth trying. However, this is one of the few desserts I made in the last two years where I actually used normal sugar. I still want to share the recipe with anyone who might be interested, but remember, moderation and balance are key. This is very high in sugar, so be careful 😉  If anyone has a recipe using natural sugar (I’m wondering if sweetening it with apple juice will work), do let me know. Enjoy! xx

Brunch galettes (savoury crepes)

Galette is the French word for savoury pancake or crepe made with potato or buckwheat flour. Those that I’ve had so far in France and French restaurants are usually made from buckwheat flour. Here’s the really simple recipe for the pancake. After that, you’re free to put toppings of your choice. 

Poached eggs with fruit bowl

Eggs are one of my favourite ‘superfoods’ – yes, I consider it as such. I love them poached, cooked in a shallow pan with a teaspoon of vinegar. Takes just a few minutes and it tastes amazing with avocado, pine nuts, green onions or just plain old salt and pepper. Breakfast for one

Chocolate fudge bars (no-bake)

This is truly one of the fudgiest, gooey-est, and most indulgent chocolate cakes I’ve made and bonus, it’s made of one of my favourite healthy foods: avocado. Even the pickiest chocolate cake lovers would love this. When it comes to dessert, my husband doesn’t like too much experimentation—a simple, basic chocolate cake is all he wants. So when I gave him a slice of this fudge cake, I thought he’d find it strange and refuse to eat it. But he did! Try it and let me know what you think. Makes 10 to 12 pieces

Pancakes smoothie combo

Is it just me, or do you also feel an incredible surge of freedom in being able to cook whatever you want, whenever, how-ever you want? When I was a kid, I often wished there was more chocolate frosting on my cake, and now? I can put a triple layer of frosting if I wanted to. But of course, I don’t. 😉 So I made this breakfast during one of those days when I couldn’t choose just one thing, so I decided to have both! Hah. Such freedom! xx Serves 2 (or just for you!)
