Pancakes smoothie combo

Is it just me, or do you also feel an incredible surge of freedom in being able to cook whatever you want, whenever, how-ever you want? When I was a kid, I often wished there was more chocolate frosting on my cake, and now? I can put a triple layer of frosting if I wanted to. But of course, I don’t. 😉 So I made this breakfast during one of those days when I couldn’t choose just one thing, so I decided to have both! Hah. Such freedom! xx

Serves 2 (or just for you!)

INGREDIENTS

For the pancakes

  • 2 large egg whites
  • 125g (1 pot) Greek yoghurt
  • 150g or slightly more than 1 cup oat flour (*You can use wholewheat, buckwheat, quinoa or brown rice flour, but it can taste different and the consistency of the batter changes as well. Add water if batter is too dry.)
  • 1 tsp vanilla extract (optional)
  • 1 tsp baking powder (optional – makes the pancakes rise)
  • ½ tsp baking soda (gives it that shiny, crisp exterior) 
  • Coconut oil for greasing the pan, optional

For the smoothie

  • 1 banana
  • strawberries
  • raspberries
  • figs
  • handful of spinach
  • soy milk, yoghurt or any milk of your choice (or plain water if you prefer)
  • 1 tbsp of maca powder (optional)
